The deep gravel banks around Bages drain hard and force the vines to work, which is what ripens Cabernet Sauvignon this far north; the result is a wine with dark fruit and a broad, sweet-edged middle. The thing people get wrong is the ranking. It sits as a Fifth Growth, and buyers read that as a verdict on quality. It was a record of trading prices in 1855, and prices have moved since.\u003c\/p\u003e\u003cp\u003eThe range runs on three tracks. The grand vin changes with the vintage, and the older bottles here have already done the softening work for you. Echo de Lynch-Bages, called Haut-Bages Averous before 2008, comes from separate plots and younger vines, and is built to drink earlier. A notable feature of the estate is the old vat-house with its traditional slatted floors, ropes, pulleys and buckets, which give the advantages of gravity flow, a process incorporated into many modern winery designs.\r\n\r\nThe estate makes a second wine, Echo de Lynch-Bages, which until 2008 was known as Château Haut-Bages Averous (the name taken from a former Pauillac estate owned by the family). The rare Blanc de Lynch-Bages, made since 1990, is an oak-fermented, lees-aged white Bordeaux blend from 6 ha (15 acres) of vines in eight different vineyard parcels to the west of the estate.
