That is a statement about cost and precision, not a grade of quality, and the brewery itself has said as much.\u003c\/p\u003e\u003cp\u003eThe range is deliberately narrow. Every bottle here is junmai daiginjo, meaning rice, water, koji and yeast only, with no added brewing alcohol, and a polishing ratio of at least 50 percent. Dassai 45 is the everyday bottle, 39 sits in the middle, and 23 is the most polished and the most delicate.
