The fruit for this wine was sourced from our family vineyards in the Strathbogie Ranges and from our grape growing friends in Dookie and the Goulburn Valley in Central Victoria. The fruit for this wine was harvested from the end of February to early March in 2013. We fermented this wine in high tech sweep-arm fermenters to maximise colour and flavour. This wine was fermented at 26??C and in stainless steel tanks to preserve primary fruit flavours. We used two yeasts; BDX and RP 15. Both yeasts help promote the development of rich colour and soft, generous texture in wines such as Shiraz. This wine was matured for ten months using new French and American Oak.
This Shiraz is deep red in colour with youthful purple hues. Rich aromas of ripe plum and dark cherry meld with chocolate and spiced vanilla notes. The palate is bright and juicy with red fruits and a smooth balanced finish.
Served perfectly with slow-braised shoulder of lamb with onions, thyme and balsamic with a side of creamy mash.
