One of the rare Champagnes produced by rosé de Saignée 100% Pinot Noir.
One of the few Champagnes using “saignée” bleeding technique, from Pinot Noir grapes exclusively. Performed as an art by Jean-Baptiste Geoffroy master like many Champagne generations of this family.
After a few hours of maceration, the wine turns into a ruby red color and then this Champagne master stops the macerating process, which requires excellent expertise.
The colour is a bright ruby red.
The nose is a freshly cut spring bouquet: rose, peony… then wild strawberry, raspberry and blackberry as a last touch.
The taste is a reflect of the nose’s fragrances: red berries.
It gives an unforgettable experience on a peach soup with marrat or gariguette strawberries, even better with wild strawberries.
Will also go well with pan-fried scallops or sole meunière.
To be kept one or two years in cellar in order to preserve this champagne’s youth and its red fruit aromas.
