La Manufacture is founded by Benjamin Laroche, who is passionate and having deep roots in an exceptional "Terroir". A native of Chablis, the Laroche family have had vineyards in the Chablis area since 1663 and have created a vineyard which is considered as one of the jewels of the Chablis appellation. "La Manufacture" means "Precise" - implying that the wines, from grapes to bottles, are manufactured precisely. They are lovers of "la Belle Ouvrage" - the French concept of perfectly crafted work. They do not have their own vines, they go out into vineyards and cellars for an extra qualitative plots selection. They strives to offer its connoisseur clientele some unique gems and the best of their "Terroir". Benjamin: “Because we do not have our own vines like an independent state, we go out into vineyards and cellars, and select the fruit of passionate winemakers. After a rigorous selection, long-term partnerships, and extra qualitative plot selection, the goal of La Manufacture is to offer its connoisseur clientele some unique gems, which might otherwise have gone unnoticed.” Situated on the left bank of the Serein river, the Côte de Léchet benefits from a south easterly exposure to the sun. Thanks to this sun exposure the very feeble and pebbly soils produce small yields and early-ripening grapes . Bright pale colour with some greenish hints. Typical nose of lemon with a slight mineral touch. Vigorous and tensed mouth with a deep intensity and clear aromas. A typical Chablis to be drunk on its freshness. It goes well with food like Gougères and other crisp, cheesy nibbles. All kinds of raw shellfish, especially oysters. Simply cooked shellfish. Snails - or prawns - with garlic butter. Delicatessen. Seafood salads. Andouillette (local Chablis sausage made with tripe and served with chips!). Mustard Rabbit or other dishes with strong mustard-based sauces.
