A Veneto producer making Prosecco DOC, in both the standard white and a rosé. Available as single bottles and in six-bottle cases.
The two bottles
Prosecco Extra Dry is the house wine — Glera, tank method, off-dry. The Rosé Cuvée DOC Extra Dry is the pink version: Prosecco Rosé is a relatively recent addition to the appellation rules, and by law it must contain Pinot Noir and carry a vintage.
Where this sits against our other Prosecco
We carry two Prosecco producers and they do different jobs. Colesel is the hillside estate — Valdobbiadene Prosecco Superiore DOCG, higher price, harder farming. Cester Camillo is Prosecco DOC from the Veneto plain: lighter, cheaper, and the one to buy by the case for a party rather than by the bottle for a tasting.
Serving
Serve at 6–8°C. Extra Dry is slightly sweeter than Brut, which reads well on its own and with fried or salty food. Drink the current release.
