Puligny-Montrachet

The most concentrated source of great white Burgundy. Puligny sits at the southern end of the Côte de Beaune and shares the Montrachet slope with its neighbour Chassagne — but where Chassagne also makes red, Puligny is almost entirely Chardonnay.

The hierarchy

Four Grand Crus: Le Montrachet and Bâtard-Montrachet, both shared with Chassagne, plus Chevalier-Montrachet and Bienvenues-Bâtard-Montrachet, which lie wholly within Puligny. The Premier Cru list is led by Les Pucelles, Les Combettes, Les Folatières, Le Cailleret and Les Perrières. Village Puligny-Montrachet accounts for the rest.

A practical quirk

The water table under the village is high, so most growers cannot dig deep cellars and the wines are often aged in Meursault instead. It also means Puligny is typically bottled a little later than its neighbours.

Serving and cellaring

11–13°C, in a proper white-wine glass rather than a small one. Village level from three years, 1er Cru from five, Grand Cru longer still.

One more glass

Between roughly 1996 and 2010, a large number of white Burgundies oxidised years before they should have. Bottles that ought to have been fresh at fifteen were brown and flat at seven. The trade calls it premature oxidation, or premox, and it affected famous names and modest ones alike.

The causes are still debated — cork sourcing, less lees stirring, tighter pressing, lower sulphur at bottling — and most producers changed practice around 2011. We mention it because it is the one piece of white Burgundy knowledge that changes a buying decision: a bottle from that window is worth opening sooner rather than later, and long cellaring advice on older white Burgundy should be treated with caution. If you are holding any, drink it this year rather than in five.
