William Fevre

William Fevre works only in Chablis, and the misreading is that Chablis is simply cheap white Burgundy. It is Chardonnay grown on Kimmeridgian limestone, a seam of ancient marine clay packed with fossil shell, and the wines come out taut and faintly saline rather than broad. That is the soil talking, not a lack of ripeness.

The range climbs by plot. Straight Chablis comes off the wider appellation. Above it sit the premiers crus, each a named slope with its own angle to the sun, from the leaner Vosgros and Les Lys through Vaillons and Mont de Milieu to the firmer Fourchaume, Montee de Tonnerre and Vaulorent. Bottles marked Domaine come from the house's own vineyards rather than purchased fruit.

The house handles oak lightly, so what separates the tiers is the site rather than the barrel. Above premier cru level, extra money buys the ability to age ten years, which is only worth paying for if the bottle will actually be kept that long.
