All Rosé
Rosé is not a blend of red and white. Outside Champagne, that method is not permitted in the EU at all.
The colour comes from time. Black grapes are pressed and the juice is left in contact with the skins — for a few hours, sometimes less. Pull the juice off early and you get the pale Provençal style; leave it longer and you get something darker and firmer. The grape matters less than the decision about when to stop.
There is a second route, saignée, where juice is bled off a red fermentation. That rosé is a by-product of concentrating the red wine, and it usually tastes like it — deeper, more structured.
Champagne is the exception: there, blending red wine into white is legal and standard.
Colour tells you about method and intent. It does not tell you about sweetness.
