Burgundy White

White Burgundy is Chardonnay, Aligoté aside, and the region shows more clearly than anywhere else how much a site can change one grape. Chablis on Kimmeridgian limestone stays lean and driven by acidity; Meursault on deeper, richer soil comes out broader; Puligny-Montrachet and Chassagne-Montrachet sit between them. Same variety, same country, different structure.

One thing worth knowing before you cellar white Burgundy: between roughly 1996 and 2010 a wave of premature oxidation affected a great many bottles, and the trade spent two decades working on closures, sulphur handling and pressing to address it. Wines made since are far more reliable — but it is a real reason to be specific about vintage rather than assuming all white Burgundy ages the same way.
