Colesel
A grower in Valdobbiadene, in the steep hills of the Prosecco Superiore zone north of Treviso. Glera is the grape throughout, made by the tank method.
The range
Fontana Vecia is the senior bottle — Valdobbiadene Prosecco Superiore DOCG Extra Dry, from the hillside appellation. Below it, Cuvée 24 Brut, FEI Prosecco DOC Treviso Extra Dry and NOAI Prosecco DOC Treviso Brut come from the flatter Treviso vineyards.
Reading the labels
Two things separate these bottles. First the zone: DOCG Valdobbiadene is the hillside appellation and the harder site to farm; DOC Treviso is the plain. Second the sweetness: in Prosecco, Brut is drier than Extra Dry, which catches most people out. If you want the drier bottle, take Cuvée 24 or NOAI.
What to expect
Prosecco is an aperitif and a mixing base rather than a Champagne substitute — the tank method keeps the fruit forward and the texture light. Drink the current release; these do not improve with keeping.
Serving
Serve at 6–8°C, opened cold and poured straight away.
