France White

France's white regions divide cleanly by what the climate lets them keep. Cool sites — Chablis, the Loire, Alsace, the chalk of Champagne — hold acidity, so the wines stay tight and can age on structure alone. Warmer sites in the Rhône and the south lose acidity as they ripen, so the whites there lean on texture and body instead.

Oak is the other axis. In the Côte de Beaune, barrel fermentation and lees work are part of how the wine is built; in Chablis and Sancerre they usually are not. Neither approach is a level of quality — but knowing which one is in the bottle tells you a lot about what you are about to drink.
