Wines for Steak Night

大單寧嘅酒喺其他枱面會撞味，但遇上牛扒就啄晒——油脂會將單寧撫平，單寧又會解走油膩，愈食愈夾。呢度係全店最重身嘅一批：Cabernet、Shiraz、Brunello、Amarone、Rioja 風格嘅 Reserva，專登留返配紅肉。煎呱扒之前開定支酒，食到最後一口都仲有酒鑑住。

Big tannin is the one thing we keep out of every other list — but steak night is where it belongs. Fat tames tannin, and tannin cuts fat, so each bite resets the next sip. These are the most structured reds in the shop: Cabernet, Shiraz, Brunello, Amarone and Rioja-style reservas, saved deliberately for red meat. Open one before the pan gets hot and it will carry you to the last bite.
