Château Rieussec
Rieussec sits on the high ground of Fargues, next to Yquem, and has been Rothschild-owned since 1984. The thing people get wrong about Sauternes is the mechanism. Nothing is added. The sweetness comes from a fungus, botrytis, that shrivels ripe grapes on the vine and concentrates what is left, and pickers go through the vineyard repeatedly over weeks taking only the berries that are ready.
That is why a second wine works differently here. Carmes de Rieussec is not simply younger vines. It is largely the fruit of the passes where botrytis had done less work, so the wine is lighter, fresher and less viscous rather than a smaller version of the same thing. Some people prefer it for exactly that reason.
Carmes is the one to open with cheese or a fruit dessert, and the half bottles solve the problem of a sweet wine outlasting the meal. Rieussec itself is for keeping, and it keeps for decades.
