Premium 7 is Baron-Fuenté's Cuvée 7, named for the seven years it ages on slats in the house cellars at Charly-sur-Marne. The blend is 40% Chardonnay, 30% Pinot Noir and 30% Meunier, with 10% of the wine vinified in oak barrels. Dosage 3 g/L, 12.5% ABV. It comes in the house's drawstring pouch.
Tasting notes
From the house: golden with delicate bubbles; floral notes with white fruit purée and lightly toasted bread; a lively attack that opens into a full, ample palate and a saline finish. The house pairs it with poultry, grilled white or red meat, meat in sauce and fish. Serve at 7–8°C.
