Variety & Style
Picked early, low in alcohol (typically 10–11%), unoaked, and very high in acid. Young, it is almost neutral: lime, cut grass, bone dry. After five to ten years it develops toast, beeswax and nuts — without ever having seen a barrel.
What to Expect
⭐ This is the wine in the collection that most needs expectation setting. Open it tonight and you will find it lean. That is not a fault — young Hunter Semillon is meant to be austere. It is a wine to cellar, or a wine to drink with oysters. For immediate pleasure, choose a Chardonnay.
