All Sparkling

Sparkling wine is sorted by how the bubbles got there, and the method changes the price more than the grape does.

The traditional method runs the second fermentation inside the bottle you buy, then ages the wine on its spent yeast. It is slow and labour-heavy. Champagne, Crémant, Cava and most quality sparkling elsewhere use it. The tank method runs that second fermentation in a pressurised tank and bottles the result — faster, cheaper, and the reason Prosecco sits where it does on the shelf.

One label term catches people out: Extra Dry is sweeter than Brut. The EU scale runs Brut Nature (0–3 g/L residual sugar), Extra Brut (0–6), Brut (0–12), Extra Dry (12–17), Sec (17–32), Demi-Sec (32–50). The word that sounds driest is two steps down the scale.

If a sparkling wine tastes sweeter than you expected, check that word before you blame the producer.
