Burgundy Red

Red Burgundy is Pinot Noir — Passetoutgrain and one or two regional appellations aside — and the grape leaves a grower very little to hide behind. There is no second variety to fill a gap in a difficult year, extraction is limited by thin skins, and the wines are usually raised in barrel, where the fruit either carries the oak or doesn't.

Which is why one village name can arrive in the glass in very different states. Gevrey-Chambertin is a boundary on a map shared by dozens of owners, not a house style. If you are working out what you like, hold the village constant and change the grower — it tells you more than moving up a level.
