Port

Fortified wine from the Douro in northern Portugal. Fermentation is stopped part-way by adding grape spirit, which leaves natural sweetness in the wine and lifts it to around 20% alcohol. Everything else about Port follows from how it is aged afterwards.

The two families

Aged in bottle: Vintage Port is declared only in the best years, bottled after about two years, and then does the rest of its ageing in glass — it needs decades and throws heavy sediment. LBV (Late Bottled Vintage) is the same idea, kept longer in cask, ready on release.

Aged in cask: Tawny spends years in wood and comes out paler, nuttier and less fruity, sold as 10, 20, 30 or 40 Year Old. Colheita is a single-vintage Tawny. Ruby is the young, simple, fruit-forward tier.

Which to buy

If you want to open it tonight, buy Tawny or LBV. If you want to keep it, buy Vintage. The practical difference matters after opening too: a Vintage Port must be finished within a day or two, while a 10 or 20 Year Old Tawny keeps for weeks in the fridge — which makes Tawny the sensible choice for a household that drinks a glass at a time.

Serving

Vintage Port at 16–18°C, decanted off its sediment. Tawny is better lightly chilled, 14–16°C.
