Yamazaki

Yamazaki was Japan's first malt whisky distillery, and the common mistake is to file it as Scotland with a different address. The method is genuinely different, and the reason is structural. A Scottish distillery can trade casks with its neighbours and blend a house style out of other people's spirit. A Japanese distillery historically could not, because the rivals were other companies with no interest in helping. So Yamazaki built the variety inside its own walls, with stills of different shapes and sizes and a cask programme that runs from American oak to sherry butts to Japanese mizunara.

The range divides by how much of that library goes into the bottle. The no-age-statement Distiller's Reserve is the broad house blend. The 12 narrows it and adds weight. The 18 is where the older sherry and mizunara components carry the wine, and the vintage limited editions are one-off assemblies that will not be repeated.

Above the 12, price is increasingly set by scarcity and by the gifting market rather than by what is in the glass. That is worth knowing before deciding which one to open.
