The Antinori family, with a winemaking legacy spanning over six centuries, presents Cervaro della Sala IGT 2021, an emblematic white wine from their Castello della Sala estate in Umbria. This cuvée is a testament to their pioneering spirit, blending the international varietal Chardonnay with a small proportion of the indigenous Grechetto grape.

The vineyards, situated at elevations between 200 and 400 metres above sea level, benefit from a unique microclimate and mineral-rich, fossil-laden soils. The Chardonnay undergoes fermentation and maturation in French oak barriques, imparting structure and complexity, while the Grechetto is vinified in stainless steel to preserve its aromatic freshness and acidity. This meticulous approach yields a wine of remarkable balance, depth, and significant ageing potential, reflecting both Umbrian terroir and refined winemaking.

The 2021 Cervaro della Sala presents a brilliant straw-yellow hue with subtle greenish reflections. The aromatic profile is intricate and evolving, revealing initial notes of citrus zest, white peach, and hazelnut, gracefully interwoven with nuances of vanilla, toasted almond, and a delicate minerality derived from its oak maturation. On the palate, it is full-bodied and impeccably balanced, showcasing a vibrant acidity that underpins layers of ripe fruit, butterscotch, and a saline complexity.
