Okunomatsu, a revered name in Japanese sake production, presents its Gold George Junmai Daiginjo Shizuku, a pinnacle expression of their craft. This Junmai Daiginjo classification signifies a sake brewed exclusively from rice, water, koji, and yeast, with the rice polished to at least 50% of its original size. This meticulous polishing removes outer layers rich in proteins and fats, yielding a purer starch core essential for delicate aromatics and a refined texture.

The 'Shizuku' method further elevates this sake. Rather than pressing the fermented mash, the sake is allowed to drip naturally through cloth bags, a slow and labour-intensive process. This 'free run' extraction ensures only the purest, most pristine liquid is collected, free from any off-flavours or harshness that can arise from mechanical pressing. The result is a sake of exceptional clarity, aromatic intensity, and profound elegance, reflecting Okunomatsu's dedication to traditional techniques and uncompromising quality.

Tasting notes

The nose is immediately captivating, presenting a delicate bouquet of white flowers, ripe pear, and subtle melon, underpinned by a whisper of mineral purity. Hints of lychee and green apple may also emerge, characteristic of premium Daiginjo. On the palate, it is exquisitely smooth and ethereal, with a pristine clarity that belies its aromatic complexity. Flavours of white peach, honeydew, and a gentle umami unfold gracefully, supported by a vibrant acidity. The 'Shizuku' method contributes to an exceptionally clean and seamless texture, with no discernible harshness. The finish is long, elegant, and remarkably clean, leaving a lingering impression of delicate fruit and a refreshing minerality. This sake is best enjoyed chilled, allowing its intricate nuances to fully express themselves.
