Region
Humidity at harvest is a problem for dry wines but a requirement for botrytis. Botrytis cinerea needs damp mornings followed by dry afternoons — a pattern the Hunter provides.
Variety & Style
The fungus dehydrates the berries, concentrating sugar and acid together. Semillon is among the world's best hosts for botrytis and is the backbone of Sauternes. Expect apricot, honey, orange peel and roasted nuts — sweet but not cloying, because Semillon holds its acidity.
What to Expect
This is a dessert wine, not a wine for the table. A small glass is enough at a sitting, and the bottle keeps for a week or two once opened.
Serving
8–10°C, small glass. Blue cheese, foie gras, almond tart, fruit tarts. Avoid chocolate — the two fight. Cellars 15 years or more.
