Clare Valley sits higher and cools at night, giving Shiraz a more restrained, peppery character than the Barossa.

Variety & Style
⭐ Fifteen years in bottle, cellared by the estate throughout. After fifteen years, Clare Shiraz shows dried fruit and fruit preserve behind leather, cigar box, dried herbs and earth. The tannin has fully resolved and the texture is silky.

What to Expect
This is not a powerful wine; it is a finished one. There is nothing to wait for and nothing to guess at — it has arrived. The corollary: the fruit is not coming back. Choosing this means choosing maturity. A Shiraz with clear provenance, cellared fifteen years by the producer, is rare in Hong Kong at $460.

Serving
17°C, decant 20–30 minutes only — mature wine does not tolerate extended air. Best finished the same evening. Braises, mushrooms, aged cheese, roast pigeon.
