The latest face of Australian wine - the team at Unico Zelo strive to showcase the unique sites and soils of Australia using varieties that can be dry-grown with minimal intervention in the harshest of climates. Specialising in Fiano and Nero, they explore three distinct terroirs of the continent - the desert, the bush and the mountains - and produce in a lo-fi manner in the cellar, with an aim for a more crystalline expression of the sunburnt country.
