打邊爐最伏嘅位，係辣加酒精會互相放大——支酒愈烈，個口愈辣。所以呢度揀嘅全部行相反路線：低酒精、微甜嘅 Riesling 同 Moscato，凍飲嘅 Prosecco 同 rosé，仲有雪得凍嘅輕身紅酒。微甜可以燄火，氣泡可以解膩，一路食一路飲都唔會疲。
Chilli and alcohol amplify each other — the stronger the wine, the hotter your mouth burns. So everything here goes the opposite way: low-alcohol, off-dry Riesling and Moscato, chilled Prosecco and rosé, and light reds that genuinely enjoy a spell in the fridge. A touch of sweetness puts out the fire, and bubbles cut through the richness, so you can keep eating and drinking all night without palate fatigue.
