All White

White wine is usually pressed off its skins before fermentation, which is why colour and tannin stay low and acidity does most of the structural work. The main variables are climate, harvest date and vessel: stainless steel keeps a wine tight and citrusy, old oak and lees contact broaden it, and neither is a mark of quality on its own.

This is the full white list across every country we carry. Serving temperature moves a white more than almost any other single decision — too cold and the aromatics shut down, too warm and the acidity goes flat. Roughly 8–12°C suits most of what is here, with the fuller, oak-raised wines at the top of that range.
