Chablis
Chardonnay from the far north of Burgundy — closer to Champagne than to Beaune, and cold enough that frost is a real annual risk. The vineyards sit on Kimmeridgian limestone, a seabed of fossilised oyster shell, and that soil is the reason Chablis tastes unlike Chardonnay grown anywhere else.
The four levels
Petit Chablis from the outer slopes; Chablis at village level, the bulk of the region; Chablis 1er Cru from forty named climats — Montée de Tonnerre, Fourchaume, Les Fourneaux, Vaillons and others; and Chablis Grand Cru, a single south-west-facing slope above the town divided into seven plots: Blanchot, Bougros, Les Clos, Grenouilles, Preuses, Valmur and Vaudésir.
What to expect
Dry, high in acid, and made with little or no new oak — which is why people who say they dislike Chardonnay usually like Chablis. It is the standard white for oysters and raw shellfish for a reason. Village Chablis drinks on release; 1er Cru rewards three to five years; Grand Cru is often closed on release and is built for the long run.
Serving
10–12°C — colder than that flattens it. Use a proper white-wine glass; Grand Cru in particular needs the air.
