German Wine

Germany is Riesling's home, and the country's best wines come from steep river valleys too cool for almost anything else — the Mosel, the Rheingau, the Nahe, the Pfalz and Rheinhessen.

Reading the label

German labels state ripeness at harvest, not sweetness in the bottle, and this is where most buyers go wrong. Kabinett is the lightest picking, then Spätlese, then Auslese, then the rare Beerenauslese, Trockenbeerenauslese and Eiswein. Any of them can be dry: the word that decides it is Trocken. So Spätlese Trocken is a dry wine from a ripe picking, while Spätlese alone is off-dry. Separately, GG (Grosses Gewächs) marks a dry wine from a top single vineyard.

What to expect

Riesling is low in alcohol — 8–12% is normal — high in acid, and among the longest-lived white wines made anywhere. Off-dry German Riesling is also one of the very few wines that genuinely handles chilli and Sichuan heat, where the residual sugar does the work that a dry white cannot. Germany also makes serious Pinot Noir, labelled Spätburgunder.

Dry Riesling 10–12°C, off-dry and sweet 8–10°C, Spätburgunder 14–16°C.
