Built to Age

好多人以為愈貴愈擺得，其實決定陳年能力嘅係結構——酸度同單寧——唔係價錢。呢度每一支都係憑骨架入選：1er Cru Burgundy、Brunello、Barolo、年份香櫁、列級 Bordeaux。大部分而家飲已經好，但擺五至十年會更靖——買嚟收，或者留返大日子都得。

Price doesn't decide whether a wine can age — structure does: acidity plus tannin. Every bottle here earned its place on backbone alone: premier cru Burgundy, Brunello, Barolo, vintage Champagne, classed Bordeaux. Most drink well today but will reward five to ten years of patience, so treat the drinking windows as a spread: open the older vintages first, and let the youngest wait at the back of the cellar for an occasion worth marking.
