Ripasso della Valpolicella DOCG Classico Collection Pruviniano 0.75 branded Domini Veneti, represents a new interpretation of Ripasso, to enhance the territory and rediscover the wines from grapes harvested in the Marano valley, a territory that until 1177 bore the name of "Pruviniano" . Valpolicella Ripasso from the Pruviniano collection is a blend made up of native vines such as: Corvina, Corvinone, Rondinella and other native varieties such as Spigamonti or Oseleta. Manual harvesting takes place in early October. The vinification foresees a fermentation with maceration on the skins for 10 days. Subsequently, the review on the Amarone marc takes place for a period of 15 days. At the end of May the wine is transferred to oak barrels for about 9 months. The refinement ends with a passage in steel and in the bottle for 4/6 months. This wine is characterized by a ruby ​​red color. The aroma is intense with an explosion of aromas such as cherry, wild berries, prunes, pepper and vanilla. In the mouth it is full-bodied, persistent with lively tannins and an aftertaste reminiscent of toasted almonds and dried fruit. It goes perfectly with all types of red meat, both grilled and braised.
