All Non-Vintage Champagne
Non-vintage is the default in Champagne, and it is a construction decision rather than a lesser grade.
An NV blend draws on several harvests, including reserve wines held back from earlier years, so that the house can deliver the same profile every release regardless of what the weather did. A vintage Champagne does the opposite: it commits to one year and accepts whatever that year was.
The ageing minimums are set in law. Non-vintage must spend at least 15 months in the cellar before release, of which at least 12 are on the lees. Vintage must spend at least 36 months. Most houses exceed both.
Grower Champagne, marked NM, RM or CM on the label, changes who made the wine and from whose fruit — worth reading if you want to know where the grapes came from.
