Billecart-Salmon

Billecart-Salmon is known for its rose, and that reputation is deserved enough that it hides the rest of the house. The mistake is assuming the rose is the point and everything else is a supporting act. What actually runs through all of these wines is a way of working in the cellar: the juice is settled cold before fermentation and then fermented slowly at low temperature, which strips out the coarser material and leaves wines that taste fine-boned rather than broad.

The range reads as a set of variations on one base. Brut Reserve is the reference point. Brut Nature is the same wine with no sugar added at the end, so the fruit has nowhere to hide. Sous Bois is fermented in wood and comes out wider and more savoury. Le Blanc de Blancs is Chardonnay alone. Demi-Sec is deliberately sweet and belongs with dessert. Above them sit the declared vintages and the prestige bottlings, including Cuvee Louis and the Elisabeth Salmon rose.

The prestige wines repay slow drinking. Opened for a toast and finished in ten minutes, they give you less than a half bottle of the rose would.
