Bouchard Pere & Fils
Bouchard Pere & Fils is a negociant, and people say that as though it settles something. It does not. Founded in 1731, the house also owns around 130 hectares in the Cote d'Or, including more premier and grand cru land than almost anyone, so a large share of what it sells is grown on its own vines.
That is what the word Domaine on the label means, and it is the single most useful thing to read here. Bourgogne Chardonnay and the regional whites are bought fruit, made competently, priced accordingly. The village wines sit in the middle. The Domaine premier crus are estate fruit from named plots, several of them monopoles the house owns outright, and this is where the wines start tasting of a particular place rather than of Burgundy in general.
Above that sit the grand crus. They are more concentrated and much scarcer, but the step from village to Domaine premier cru buys more actual change in the glass than the step above it does.
