法國紅

法國各個紅酒產區之間的分別，與其說是品種，不如說是氣候，以及由氣候長出來的規則。波爾多混釀 Cabernet Sauvignon 與 Merlot，因為海洋性氣候令單一品種成熟變成一場賭博；勃艮第只用 Pinot Noir，因為法定產區這樣寫；南隆河混 Grenache、Syrah 與 Mourvèdre，因為高溫與強風之下，混釀比任何單一品種可靠。

所以法國酒標上的混釀，通常是對一個在地問題的答案，不是酒莊風格。這也解釋了為甚麼同一個品種相隔幾百公里就讀起來完全不同——Cabernet Franc 在 Saint-Émilion 是輔助 Merlot，在 Chinon 則是獨當一面。

馬克-奧利維爾·布菲 (Marc-Olivier Buffet) 是家族第八代傳人，於2005年成為弗朗索瓦·布菲酒莊 (Domaine Francois Buffet) 的核心人物。如今，酒莊佔地超過7.5公頃，採用沃爾奈 (Volnay) 和波瑪 (Pommard) 產區的葡萄釀造15個法定產區葡萄酒。這裡採用傳統釀酒方式，根據葡萄園和年份的不同，葡萄會完全去梗、部分去梗或完全不去梗。之後，葡萄酒會在橡木桶中陳釀約18個月（其中20%使用新橡木）。 沃爾奈葡萄酒始終擁有細膩的單寧，使其口感柔順，並具有良好的陳年潛力。這片葡萄園擁有夢幻般的風土條件。豐富的淤泥和礫石賦予了葡萄酒極其細膩的口感和高貴的質感。
