After studying the vineyards in Beaujolais in 1995 and 1996, Thibault was always annoyed by the region’s misperceived inferiority. In 2007, he began the Beaujolais project focusing on the cru Moulin-à-Vent. The vineyards are approached with serious Burgundian framework, featuring individual old parcels such as La Roche.
