法國

法國酒標寫的是地方，不是葡萄品種。AOC 制度自 1935 年起由 INAO 管理，為每一個法定產區劃定範圍，並訂明可用品種、最高產量和最低酒精度。所以「Chablis」本身已經說明了是種在 Kimmeridgian 石灰岩上的 Chardonnay，「Sancerre」說明了是 Sauvignon Blanc，兩者都不用把品種印在酒標上。

法定產區不會告訴你的，是這支酒好不好。它是一條界線，不是一個分數；同一條界線之內的兩家酒莊，可以做出完全不同的酒。我們的法國選酒涵蓋波爾多、勃艮第、隆河、盧瓦爾、阿爾薩斯與香檳區。

Drappier香檳酒莊位於香檳區南部的奧布省（Aube），其歷史可追溯至1808年。酒莊以其對風土的深刻理解及對傳統釀造工藝的堅持而聞名，尤其在低劑量補糖（low dosage）和減少二氧化硫使用方面走在前沿。Carte d'Or Brut NV是Drappier的標誌性酒款，主要由高比例的黑皮諾（Pinot Noir）釀製，輔以少量霞多麗（Chardonnay）和莫尼耶皮諾（Pinot Meunier）。此款香檳的葡萄源自奧布區的石灰質黏土，富含Kimmeridgian泥灰岩，賦予酒體獨特的礦物感和結構。釀造過程中，Drappier採用天然酵母進行發酵，並在不同尺寸的不銹鋼桶和橡木桶中陳釀，以保留葡萄的原始風味和複雜性。其極低的補糖量（dosage）確保了香檳的純淨度和真實表達，展現出奧布風土的精髓與Drappier家族的釀酒哲學。此款香檳以其卓越的平衡感、豐富的果味和細膩的氣泡而著稱，具備良好的陳年潛力，可隨時間發展出更深層次的風味。
