Wines that love the sea: crisp, mineral whites in the Chablis, Albariño and Muscadet mould, Champagne and sparkling for oysters and fried dishes, sake for sashimi and shellfish, and bone-dry rosé. For richer fish — grilled turbot, tuna, eel — we slip in a few light, silky reds like Pinot Noir and Beaujolais. Everything here is in our warehouse right now, ready to go.
