白酒一般在發酵前就把果皮壓走，所以顏色淺、單寧低，結構主要靠酸度支撐。主要變數是氣候、採收時間和容器：不鏽鋼令酒保持緊緻與柑橘感，舊桶和酒渣接觸則令酒變得寬闊，兩者本身都不是品質的標記。
