法國紅

法國各個紅酒產區之間的分別，與其說是品種，不如說是氣候，以及由氣候長出來的規則。波爾多混釀 Cabernet Sauvignon 與 Merlot，因為海洋性氣候令單一品種成熟變成一場賭博；勃艮第只用 Pinot Noir，因為法定產區這樣寫；南隆河混 Grenache、Syrah 與 Mourvèdre，因為高溫與強風之下，混釀比任何單一品種可靠。

所以法國酒標上的混釀，通常是對一個在地問題的答案，不是酒莊風格。這也解釋了為甚麼同一個品種相隔幾百公里就讀起來完全不同——Cabernet Franc 在 Saint-Émilion 是輔助 Merlot，在 Chinon 則是獨當一面。
